After a 2-hour drive from Makati, we arrived at Bale Dutung ("house of wood" in Kapampangan) in Angeles City, home of famous chef Claude Tayag. We went there to experience Lechon (roasted pig) prepared in 5 different ways. Just looking at the picture makes my mouth water again. We were treated to (Top Left: Clockwise) Lechon Flakes wrapped in Tortilla (Prichon or Pritong Lechon), Crispy Lechon skin with Liver sauce, Sinigang na Lechon, Grilled Lechon Ribs (Inihaw na Tadyang ng Lechon), and Asado Pata (Legs - Inasadong Pata ng Lechon). And if you're adventurous enough, you can also ask for the tongue ^^ (Bottom-right picture). I tried it but didn't finish everything because it was rubbery and it had no distinct Lechon taste to it. *blaahhhh*
The whole meal lasted for 3 hours! Aside from the Lechon servings, they also served tasting portions of other dishes that showcase their products. (Top Left: Clockwise) Pako salad (Ensaladang Pako), Aligue Maki (Talangka Sushi), Fried Catfish with White Shrimp Paste Sushi (Hito at Balo-balo sushi), Fried Ubod Spring Rolls in Oriental Sauce (Piniritong Lumpian Ubod in Claude 9 Oriental Sauce), Paradiso (Ube, Yema, Macapuno Creme Brulee), Barbeque Chicken with Aligue Rice (Inasal na Manok at Claude 9 Talangka Rice).
Majority of us agreed that the best dish was the Grilled Lechon Ribs! The smoky flavor from the grill combined with the taste of Lechon is revelational. Can't wait to try it this Christmas season when every meal is never complete without a Lechon! I doubt if there would be any leftover ribs though.
When I got back home, I heard of another way to prepare Lechon. They said you can also use leftover Lechon to flavor lugaw! (congee!) It is something that I haven't tried yet and I'm looking forward to making it this Christmas as well. Merry Christmas everyone! (2nd Wave).
