Easter Pancakes

In the past two weeks, mama seems to be craving for pancakes. She made pancakes twice this week at our store for our 3pm merienda. The first time I tasted it, my initial reaction was, “unsa man ni?!” (What is this?!). Of course, mama with her ego never admitted it didn’t taste good but even professed to everyone that she really loves the ones she made. “All it needs is sugar.” she said.

Never giving up, she tries making them for the second time. This time around, her business partner Nang BB, was visiting the store. She came just as the pancakes were done. Mama shoved her a piece for her to try. First bite and her initial reaction was “unsa man ni?!” (^O^)v I couldn’t help but laugh.

Knowing by this time that it was my mom who made the pancakes, Nang BB in some kind of desperation tried to make up for her initial reaction. I assured her not to worry and told her that it was my initial reaction too. Hihihi (^^;)

And so for Easter, I made these for mama. One of the few recipes I learned from school. I’m glad she loved it and even called it “gourmet pancakes.” She couldn’t help but ask for the POR-MUU-LAH (formula). We put papa to the test and see if he can tell the difference. He noticed that it had a more distinct egg flavor than mom’s.

I had an unfair advantage though. I came equipped with butter and maple syrup. Now who can resist that?

Pancakes

Ingredients:

200 grams All purpose flour

2 tsps sugar

4 pcs eggs

pinch salt

1/3 cup melted butter (unsalted)

1 ½ cups full cream milk

Procedure:

  1. Separate the egg whites from the egg yolks.
  2. Mix all dry ingredients in a bowl and sift.
  3. Mix all wet ingredients, except for the egg whites, in a separate bowl. Beat until well mixed.
  4. Gradually pour wet ingredients into dry ingredients, continuously stirring until a smooth batter is formed. Let rest for 20 minutes.
  5. When ready to cook, beat egg whites until foamy. Fold this into batter.
  6. Heat frying pan and fry batter until done.
